There are a number of hero ingredients that always get us excited at Daylesford. In autumn, it is squash – we grow dozens of different kinds in our Market Garden and it is our head gardener Jez’s favourite crop to grow and harvest.

As an ingredient, the dense, sweet, earthy flesh of heritage squash is extremely versatile and provides endless inspiration for our chefs, who have prepared a three course menu in celebration of its qualities.
