Foraging is a traditional, age-old skill that we are passionate about at the Cookery School, offering the opportunity to harvest and eat the most delicious, seasonal ingredients from nature’s larder for free.

This full-day course will give you a fascinating insight into the best wild foods available on our doorstep. Begin the morning exploring the Daylesford estate on a guided foraging walk, where you will gather ingredients that will later be cooked for lunch. The estate has a bountiful wild larder from game birds to crayfish and wild garlic to meadowsweet.
Throughout the year our foraged finds change with the seasons, sometimes including wild salads and greens, edible flowers, herbs, wild berries, crayfish or game. After your adventure outside, return to The Cookery School for a well-deserved cup of tea or coffee accompanied by delicious nibbles, while our tutors introduce you to your menu for the day and demonstrate how to craft your wild bounty into a series of imaginative dishes. You can expect to get hands-on creating recipes using foraged ingredients such as rabbit, wild herbs, nettles or venison.
Full-day course includes practical and demonstration cookery sessions, a selection of dishes to eat throughout the day, refreshments and all course material. Guests of The Cookery School also enjoy a discount of up to 25% in our Farmshop after their course.

How many people can attend?
Our cookery courses can host up to a maximum of 12 guests, with everyone seated around our large central kitchen island and cooking in pairs at each of the 6 cookery workstations in the school.What do I need to bring with me on the day of the course?
We will supply everything that you need for the course, including an apron to wear. As part of the day will be spent outdoors foraging for ingredients, we recommend wearing appropriate clothing such as a warm coat and waterproof footwear ie. boots or wellingtons.What will we be cooking?
We plan the menus for all our cookery courses roughly 1-week in advance to ensure that the dishes created are as seasonal as possible therefore, we are unable to publish what will be covered on this course.I have dietary requirements can I attend?
On booking, there is a mandatory field to fill in under the name for each guest attending where you can provide details of any dietary requirements or allergies. With this information we can then tailor the days menu to suit or provide alternative ingredients where necessary.Can I book this experience as a gift?
You can book places in advance for as a gift for somone, however if you do not know yet whether they will be able to attend we recommend buying them one of our gift vouchers instead.
