Born and raised in Mexico, Ashton trained at Les Roches in Switzerland before spending over a decade in Hong Kong, where she opened her first restaurant. Now based in the Cotswolds, she brings her passion for authentic Mexican cuisine to the Daylesford Cookery School for a very special course combining traditional recipes and techniques with seasonal ingredients from our farm.
During this full-day course, Ashton with guide you through recipes before everyone gets hands-on creating a number of delicious Mexican dishes from scratch which celebrate the colour, spice and freshness of her native cuisine. Throughout the day, you’ll gain practical cookery skills from both Ashton and our team of Cookery School Tutor along with an insight into authentic Mexican cooking, from balancing heat and acidity to working with seasonal ingredients to achieve bold, honest flavour. You will sit down to eat every dish together throughout the day whilst we pour you a glass of wine or margarita!
Full-day course includes practical and demonstration cookery sessions, lunch, refreshments and all course materials. Guests of The Cookery School also enjoy a discount of up to 25% in our Farmshop after their course.
