Panettone, dark chocolate and apricot bread and butter pudding – a guest recipe by Tait Miller

100g dark chocolate chips 

100g dried apricot 

1 tsp nutmeg 

1/2 all spice 

1/2 tsp cinnamon 

1ltr cream 

6 eggs 

500g sugar 

1 panettone 

250g butter 

300ml milk

Whisk the flour, eggs and sugar until pale and fluffy. Combine the cream, allspice, nutmeg and milk.

Cut the panettone and butter each slice generously. Lay all slices in a buttered dish and pour over the wet mix. Leave to sit for 10 mins before pushing in the chocolate chips and apricot pieces. Grate over some nutmeg and sprinkle with a little sugar.

Bake at 180° for 30-35 mins. Serve and enjoy.
