Panettone, dark chocolate and apricot bread and butter pudding – a guest recipe by Tait Miller

Ingredients | 100g dark chocolate chips 100g dried apricot 1 tsp nutmeg 1/2 all spice 1/2 tsp cinnamon 1ltr cream 6 eggs 500g sugar 1 panettone 250g butter 300ml milk |

Whisk the flour, eggs and sugar until pale and fluffy. Combine the cream, allspice, nutmeg and milk.
Cut the panettone and butter each slice generously. Lay all slices in a buttered dish and pour over the wet mix. Leave to sit for 10 mins before pushing in the chocolate chips and apricot pieces. Grate over some nutmeg and sprinkle with a little sugar.
Bake at 180° for 30-35 mins. Serve and enjoy.
