Daylesford Chablis

Since 1792 Jean Collet & Fils have been devoted to their vineyards located on the unique soils of Chablis. The family now cultivate 40 hectares of vines on the best hillsides on the left and right banks of the River Serein which benefit from a range of climates, and which reflects the typical characteristics of the different Chablis terroirs. To make the most of the unique terroir that is Chablis, Jean Collet & Fils has embraced sustainable and organic farming, and in 2018 a large portion of their wines were certified organic. By controlling yields, Jean Collet & Fils harvest concentrated, high-quality grapes which add complexity to their finished wines.

In the vineyards and in the cellar, their policy is to let the original terroir express itself in the wines, which is why they adopt a minimal intervention approach to their winemaking. Following the spirit of their Chablis tradition, Vallée de Valvan is matured and vinified in the most natural way possible and held in stainless steel vats. Spontaneous alcoholic fermentation allows the characteristics of each terroir to reveal its true nature. At the estate, each cuvée has its own maturing process, to respect the unique and inimitable characteristics of each climate, while remaining attentive to the specific features of each vintage.

The wines express the complex and exceptional minerality of Chardonnay from Chablis, along with the care and love the family has invested in their vineyards for over 230 years.
