Our Daylesford Organic Chianti is intriguing, surprisingly light and seductive. Created with 90% Sangiovese and 10% Colorino, which adds a delicious black fruit edge to the red cherry of the famous Tuscan grape. Pair with Rich ragu, game, strong cheese.

Daylesford Chianti

The Torre a Cona wine estate stands majestically in the hills above Florence, and since the 1930s it has cultivated the Sangiovese grape on 20 hectares of vineyards. The wine is fermented in temperature controlled stainless steel vats before maturation.Owned by the Rossi di Montelera Counts, the 18th-century villa dominates the surrounding Chianti vineyards and olive groves, which encircle traditional Tuscan farmhouses.

The Count Rossi di Montelera fashions this elegant, traditional Chianti exclusively from estate-grown grapes and ages the wine for 18 months in Salvonian oak barrels or French oak Tonneaux. Every step in the cellar leads to a perfect expression of the grapes’ potential. The fruits are carefully selected, hand harvested and gently pressed to preserve the aromatic expression of berries. The wine matures in an underground ‘Bottaia’ where the constant temperature and humidity create the ideal ecosystem for the wine to achieve complexity and its unique personality.
