For many, brisket is unbeatable when it comes to slow-roasting joints. This boneless joint, cut from the forequarter, is ideal for slow roasting, braising, home smoking and pulled beef. With rich marbling of fat and ample thick fibres, after low and slow cooking brisket becomes tender enough to carve with a spoon. This size should be enough to serve ten people.

Our award-winning organic herd of traditional, rare breed animals grazes our lush clover-rich grass pastures throughout their lives, producing the best quality tender, succulent meat. We dry-age our beef for maximum flavour.
To cook, first sear the brisket on medium-high heat for a deep caramelised flavour and golden-brown colour, add liquids like wine, stock or vegetables according to your preferred recipe and then cover the casserole and transfer carefully to the oven at 155°c-160°c Cook for 2-2½ hours, or until the beef is very tender.

Keep refrigerated 0-5°C. Consume within the use by date. Once pack is opened use on the same day. Suitable for freezing on day of purchase. Use within one month. Defrost fully before use. Do not re-freeze once defrosted.
