Pork belly is a brilliant slow-roast option as the naturally high fat content is ideal for being cooked at low temperatures for a long time. Pork belly matches well with bold seasoning and spices, or keep it simple with sea salt on the rind for superlative crackling.
Both bone-in or boneless are good choices; boneless means easier carving whereas you will gain added flavour and succulence from cooking on the bone.
The pork is from free range, organic, outdoor bred pigs, sourced from an organic farmer in Gloucestershire who shares our values in animal welfare and meat quality. We choose Large White pigs crossed with Duroc, known for their intramuscular fat and marbling, which helps with flavour and succulence.

For medium pork, cook at 165C for 35 minutes per 500g plus 35 minutes. For well done, cook for 40 minutes per 500g plus 40 minutes. These are guidelines only as cooking appliances do vary. Always ensure that meat is cooked thoroughly and piping hot.
Keep refrigerated 0-5°C. Consume within the use by date. Once pack is opened use on the same day. Suitable for freezing on day of purchase. Use within one month. Defrost fully before use. Do not re-freeze once defrosted.
