DAYLESFORD SMOKED SALMON ON KEFIR BUCKWHEAT BLINI WITH PICKLED BEETROOT
An old favourite, blini with smoked salmon are always well received at Christmas gatherings. Made with buckwheat, these blini are gluten free and a healthy boost for your gut with the addition of our organic kefir. Served with our new organic smoked salmon from our Smokery at the farm and a hearty serving of our delicious organic crème fraiche, they are irresistible.
SHREDDED TURKEY, RAW SPROUT, TOASTED WILD RICE, QUINOA & LENTIL SALAD WITH CRANBERRIES & PISTACHIOS
Laced with raw sprouts, herbs and spices, this toasted grain salad is satisfying and wholesome, perfect for feeding a crowd over the festive season. We love to serve it with a spoonful of our organic yoghurt and a sprinkling of toasted pistachios.
SMOKED PHEASANT SALAD WITH BLOOD ORANGE, RADICCHIO, FENNEL & TOASTED COBNUTS
Through the autumn and winter months, game and other seasonal wild food is celebrated at Daylesford. Pheasant, often only served as a roast whole bird, has a delicate gamey flavour and tender texture when cooked more gently. We have recently started smoking pheasant and have found it works beautifully in salads or served as a nibble with bread and pickles when cooked this way.
VENISON, PORT & BAY CASSEROLE WITH SAUTÉED MARKET GARDEN WINTER GREENS & PARSNIP PURÉE
This warming winter casserole celebrates our venison, farmed organically on our Staffordshire estate. Enjoying as wild a life as possible, it’s a nutritious, lean meat and pairs perfectly with root veggies and winter greens.
CLEMENTINE, STEM GINGER & HONEY STEAMED PUDDINGS WITH CHAI CRÈME ANGLAISE
These puddings are laced with warming Christmas flavours – sweet spice, ginger and honey. Decorated with caramelised clementine slices and jewels of pomegranate they make a beautiful finishing touch to a festive feast.
CHRISTMAS TEA INFUSION WITH GINGER, CINNAMON STICKS & CLEMENTINE
This simple infusion is warming and cleansing, gently easing digestion and providing plenty of comfort over the festive season. For a little extra sweetness, add a halved dried apricot to the brew or a spoonful of organic honey to each cupful. It goes particularly well with our organic savoury biscuits.
