Daylesford Savigny-lès-Beaune

Seguin-Manuel has undergone a major rejuvenation since its acquisition by Thibaut Marion in 2004, 180 years after its foundation in 1824.

Coming from a ten-generation family of winegrowers, Chanson Père & Fils, Thibaut started his career, and honed his skills for seven years, at the family winery in Beaune. Today, he puts his experience, passion, and energy at the service of the great wines of Burgundy. The estate, which has been officially certified organic since 2015, ploughs its soil to eliminate competing weeds, develop its microbial life and strengthen the roots of the vines. The date of harvest is decided when each plot has reached its full ripeness, and each plot is harvested by hand.

The Pinot Noir grapes for this wine are vatted in stainless steel tanks for 15 days before natural fermentation.  Maturation for 12 months takes place in French oak casks, with 15% new barrels.
