Sweet chestnut and apple stuffing – a guest recipe by Tait Miller

300g peeled chestnuts
1 red onion, chopped
1 white onion, chopped
3 cloves garlic, chopped
300g breadcrumbs
100ml milk
100g dried figs
100g ground almonds
2 apples, chopped
100g mushrooms, chopped
1/2 tsp allspice
2 eggs
50g salted butter
Salt and pepper
Preheat your oven to 160°C. Put a frying pan over a medium heat and sauté the onion and garlic. Add in the mushrooms and apple. Cook until soft and starting to brown.
Tip into a large bowl and mix in the remaining ingredients. Get a shallow dish and butter the base and sides before tipping everything in the bowl in.
Place the sliced butter on top and roast in the oven for 25-30 mins until golden.
