For many years, the vineyards have been committed to an environmentally responsible approach, and all their estates are certified ‘High Environmental Value’ (HVE). It is a voluntary approach, built around the four major environmental aspects of biodiversity protection, phytosanitary strategy, fertilization management and water resources management. The vineyards only the finest Sauvignon Blanc grapes to produce this classic Pouilly-Fumé. The grapes are pressed in a pneumatic press before fermentation and maturation in stainless steel vats to produce a wine with vibrant freshness, texture and herbaceous notes.
