For the perfect roast chicken, our Cookery School tutors recommend the following method:
Preheat the oven to 190°C. Cut a lemon in half and squeeze some of the juice inside the cavity along with a sprinkle of sea salt. Smear the skin with softened butter or a little olive or vegetable oil. Squeeze over the rest of the lemon juice and rub in plenty of sea salt and freshly ground black pepper.
Put the chicken into a roasting tray and put into the oven for 15 minutes. Turn the oven down to 180°C and turn the chicken over so that it is resting breast side down. After 20 minutes turn it back again and allow to cook for another 20 minutes. Finish by turning the oven up to 190-200°C and cook until the skin has become crisp and golden (this should only take about 10 minutes). Check the chicken is cooked through by inserting the tip of a knife into the thickest part of the thigh; the juices should run clear.
After cooking, allow the chicken to rest before carving to relax the meat and ensure juicy succulence.
